The Cellar Caffetteria reimagines the historic Cole’s Cafeteria as a modern Italian-inspired dining spot. Oversized checkerboard flooring, bluestone laneway walkways, and intimate booth seating create an atmosphere that’s both playful and transportive. Guests can enjoy house-made pasta, all-day aperitivi, and bespoke creations from Matt Bax’s Cocktail Laboratory, where artful cocktails push the boundaries of flavour.
