Marmelo is Ross and Sunny Lusted’s opulent take on Portugal and wood fired cooking, inspired by the small restaurants and bars of coastal Portugal and Spain where, like Melbourne, the markets are integral to the fabric of daily life.

Known for cooking with wood and charcoal, Ross has centred Marmelo’s open kitchen around a custom-built charcoal grill and wood oven.

Designed for sharing, the experience moves at a gentle pace, from long lunches into late evenings. Expect warm, intuitive hospitality, a considered wine list and dishes that speak to memory, place and season. It’s a space to gather, linger and return to, where each plate carries the quiet influence of the Iberian Coast.

Bar Marmelo is the casual, bar-led counterpart to Marmelo, moving from slow mornings (9am to noon) to late-night drinks, serving snacks, cocktails and wine till 10.30pm.
