The original Russell Street branch of Hakata Gensuke is a Japanese noodle bar specialising in the pork bone noodle soup known as tonkotsu ramen.

The signature tonkotsu is prepared using a special master stock to ensure the true, rich and tantalising Japanese flavour. The noodles and gyoza skins are prepared in a temperature and humidity-controlled room. They're slightly flatter and chewier than typical Hakata-style noodles, though you can choose the firmness of your noodles when you order, along with a range of special toppings.

Hakata Gensuke also serves gyoza dumplings and chicken karaage.
