Freyja brings a new Nordic approach to Australian dining in the magnificent setting of the 1880s Venetian, heritage-listed Olderfleet building.

With creative director Soren Trampedach, Michelin star chef Jae Bang has relocated from Norway to present a sophisticated sample of his country’s culture and the new culinary philosophy known as New Nordic Cuisine.

Combining experimental principles with traditional Northern European practices, methods such as pickling, curing, smoking, preserving and lacto-fermenting are showcased in contemporary dishes.
