Experience the amazing food scene of Shanxi province, China's home of noodles, at Dao Noodle, the only place serving handmade dao xiao mian, knife-sliced, noodles in Melbourne.

Dao xiao mian are prepared by thinly cutting a block of dough directly into boiling water, resulting in irregularly-shaped noodles with varying thickness, allowing them to absorb flavours from sauces and broths more effectively. This technique is a form of art that takes years of practice and which creates the most luscious noodles you will ever taste.

Dao's authentic sauces, rich in flavour, complement the bouncy and chewy noodles in every way possible. Warming noodle soups are perfect for the chilly weather.
