Collins Kitchen's open-plan layout offers guests a contemporary setting, creating an intimate and relaxing escape from the bustling city.

Guided by the philosophy, 'Food. Thoughtfully sourced. Carefully served', the culinary team have reimagined the classic Australian barbecue and paired it with the traditional American-style smoked ribs and meat, premium meat cuts from the grill, wood-oven roasted fish and vegetables cooked to perfection, and of course their signature desserts.

Enjoy food cooked over smoke and flames, using only the finest local produce.

For dinner you have an option of a la carte service or the Feed Me menu (choose between a little or a lot).

Plus, experience a daily multi-award winning buffet breakfast, a luxurious high tea on Saturdays and buffets on Fridays and Sundays.
