Hidden beneath Bourke Street, Dolly is Le Meridien's underground European restaurant and late-night cocktail bar, known for its bustling room, polished dining, and popular Saturday live jazz nights.

The Night Creatures take over the room as a five-piece band for Dolly's biggest live jazz night of the year.

In the kitchen, Bordeaux-born, Michelin-trained Executive Chef Hervé Borghini leads the four-course signature menu with Dolly favourites such as steak frites and crème brûlée featured across the experience.
