Maintaining a 'market to plate' philosophy, they plan, prepare, and create seasonal food and drinks with sound techniques and a respectful approach to ingredients. From grass-fed Angus beef raised in the Riverina region, to succulent wagyu from the Limestone coast, to mouth-watering Bass Strait salmon, their locally sourced produce comes from natural origins.
