Tucked away on the ground level of The Windsor Hotel’s heritage wing is a new pint-size bakery, Kudo, by husband and wife chef duo, Felix Goodwin and Elena Nguyen.
Slip past the heritage entrance (enter from outside the hotel) and you’ll find the long, narrow café, where circular stands – their shape inspired by canelé – display the baked goods. It’s standing room only, with just enough space to perch and enjoy a pastry with Ona coffee. Also on sale are loaves of bread and a changing selection of sandwiches.
Everything in Kudo is gluten free, but you'll be surprised by the taste and textures of the pulled-from-the-oven cookies, canelés, madeleines, choux puffs and airy chiffon cakes. Felix is coeliac but Elena isn't, and with her research and development, the couple are creating delicious baked treats that taste and feel no different than their gluten-based counterparts.
