Traditional aromatic spices, combined with slow cooking, creates taste sensations such as Zighini: cubes of lamb in a rich, fiery, bright red berber sauce. Add a bowl of fava beans, cooked until tender, mashed then mixed with ghee butter and seasoning, topped with green chilli, onions and tomato.

Enjoy with spongy, injera flatbread and an African beer, or Ethiopian coffee with ginger.
