In the Dairy Hall at Queen Vic Market, RIPE offers over 50 varieties of Australian cheese.

Their cheesemongers have created the perfect triple-cheese toastie, filled with Australian gooey mozzarella, tasty vintage cheddar and a smear of blue. Served with caramelised champagne leeks, on sourdough bread.

Ripe is exclusively Australian. Every product is locally made: cheese, crackers, condiments and beverages. More than 60% comes from Victoria, supporting the state's talented artisan cheesemakers and dairy farmers.

For a limited time, RIPE have partnered with Friend and Burrel, Truffle Paddock and Gewurhaus to create truffle toasties. The toastie has mozzarella and Cheddar cheese between buttered sourdough, with shaved Australian truffles and black truffle salt. Only available on Friday, Saturday and Sunday. Pre-order to avoid missing out.

Also for a limited time, RIPE have partnered with Stone & Crow, and Friend & Burrel to create a luxurious truffle triple cream brie.
