Social enterprise Scarf has partnered with Garden State Hotel on Flinders Lane to present their latest dinner series, designed to help young people seeking protection and those from refugee and migrant backgrounds get a start in the hospitality industry. With the support of experienced hospitality mentors, young Scarf trainees will run the Tuesday evening sessions offering a two-course set menu.
The menu, designed by Garden State Head Chef, utilises the very best of local produce that reflect the season. Celebrate spring with tasty dishes like 'Mt Zero lentil salad with smoked salmon, goat’s curd and beetroot', 'Mushroom linguine with truffle pecorino and chili', and 'Grilled sirloin with parmesan mash, spinach and confit cherry tomatoes'.
